Catalan Cuisine - A Guide.

Barcelona a town famous for its cultural variety and multiple influences and in no area is this more obvious than its cuisine. Heavily influenced by the encompassing Catalan area and its various geographical landscape the area is a liquefying pot of fresh veg and choice fish, birds and game. Catalan's also have a growing reputation thru Spain and the world and the area is fast becoming famous for producing the best cooks and best gastronomy in the country ( a title which has been historically held by the Basques and one that they don't go to relinquish without a fight ).

Much of Catalan cuisine lies in the preparing of sauces for beef and fish dishes ; a firm fave is "Romesco" ; sometimes made with tomatoes, almond, olive oil and garlic and the classic oil and garlic based "Allioli" is also a well trusted formula in the town's restaurants and kitchens. Simplicity is also welcomed in Catalan cuisine and in no dish way more than the handsome "Pa amb tomaquet", a dish of fresh bread rubbed with tomato, garlic and olive oil regularly brought out before a meal in restaurants and much praised as a juicy substitute to bread and butter.
